This Healthy Broccoli Cheddar Pasta Salad combines fiber-rich vegetables, protein-packed cheese, and whole-grain pasta into a quick and nutritious meal. It's perfect for meal prep or a quick weeknight dinner.
Ingredients
8 oz Dry Whole-wheat or Chickpea Fusilli
3 cups Fresh Broccoli Florets
1/4 cup Red Onion, finely diced
1 cup Sharp White Cheddar Cheese, cubed or shredded
1/4 cup Sunflower Seeds or Sliced Almonds
1/2 cup Plain Greek Yogurt
2 tablespoons Extra Virgin Olive Oil
1 tablespoon Apple Cider Vinegar
1 teaspoon Raw Honey or Maple Syrup
1 teaspoon Dijon Mustard
Sea Salt and Black Pepper to taste
Instructions
- Boil a large pot of salted water and cook pasta until 'al dente'
- While pasta is cooking, chop broccoli into small bite-sized pieces
- Combine Greek yogurt, Olive Oil, Honey, apple cider vinegar, Dijon mustard, salt, and pepper in a bowl and whisk until smooth
- Drain pasta and rinse under cold water
- In a large bowl, combine pasta, broccoli, red onion, and cheddar cheese
- Pour dressing over the salad and mix until well-coated
- Top with sunflower seeds or almonds before serving
