Ingredients
1 1/2 cups Oat Flour
1 teaspoon Baking Powder
1 teaspoon Cinnamo
1/2 teaspoon Ginger
1/4 teaspoon Nutmeg
1/4 teaspoon Sea Salt
1/3 cup Melted Coconut Oil
1/2 cup Pure Maple Syrup
1 Large Egg
1 cup Freshly Grated Carrots
1/2 cup Chopped Walnuts
8 oz Low-Fat Cream Cheese
1 tablespoon Maple Syrup (for the swirl)
1 teaspoon Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper
- In a large mixing bowl, whisk together oat flour, baking powder, cinnamon, ginger, nutmeg, and sea salt
- In another bowl, stir together melted coconut oil, maple syrup, and egg. Fold in grated carrots and walnuts
- Gradually add the dry mixture to wet ingredients and stir until just combined
- In a small bowl, beat cream cheese with maple syrup and vanilla until smooth
- Spread the carrot cake batter in the prepared pan, dollop the cream cheese mixture on top, and swirl together
- Bake for 25 to 30 minutes until a toothpick comes out clea
- Cool in the pan for at least 20 minutes before cutting into squares
