This Healthy Cilantro Lime Ground Chicken Taco Salad transforms your standard lunch into a high-energy, flavor-packed celebration with fresh romaine, creamy avocado, and seasoned ground chicken topped with zesty lime and cilantro.
Ingredients
1 lb Lean Ground Chicke
4–6 cups Chopped Romaine Lettuce
1/2 cup Fresh Cilantro (chopped)
3–4 tablespoons Fresh Lime Juice
1 tablespoon Avocado Oil or Olive Oil
1 teaspoon Raw Honey or Maple Syrup
1 large Ripe Avocado (sliced)
1 cup Cherry Tomatoes (halved)
1/4 cup Red Onion (finely diced)
Cumin, Garlic Powder, Sea Salt to taste
Instructions
- Heat one tablespoon of Avocado Oil in a large skillet over medium-high heat. Add the ground chicken, breaking it apart with a wooden spoon. Cook until it starts to turn golden brow
- Once the chicken is mostly cooked, sprinkle in your cumin, garlic powder, and sea salt. Stir in half of the cilantro and two tablespoons of lime juice. Let the flavors meld for another 2-3 minutes
- In a small bowl, combine the remaining lime juice, olive oil, raw honey, and the rest of the chopped cilantro. Whisk until emulsified
- Place romaine lettuce in large serving bowls. Top with seasoned ground chicken, cherry tomatoes, diced red onions, and avocado slices
- Drizzle the cilantro lime dressing over the salad before serving
