Description
Healthy Cinnamon Roll Bliss Bars are a soft, cake-like treat swirled with a rich cinnamon-maple filling, making them a wholesome alternative to traditional sugary snacks. They are perfect for sharing and can be made nut-free or vegan with simple substitutions.
Ingredients
2 cups Almond Flour
1/4 cup Coconut Flour
1/2 cup Maple Syrup
1/3 cup Melted Coconut Oil
2 Units Large Eggs
1 teaspoon Vanilla Extract
1/2 teaspoon Baking Powder
2 tablespoons Ground Cinnamo
2 tablespoons Coconut Sugar or Monk Fruit
1/4 cup Coconut Butter or Greek Yogurt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper
- In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, and a pinch of salt
- In a separate bowl, whisk the eggs, maple syrup, melted coconut oil, and vanilla extract until well combined
- Gently pour the wet ingredients into the dry ingredients and stir until a thick batter forms
- In a small ramekin, mix the cinnamon with the coconut sugar and a teaspoon of melted coconut oil
- Spread two-thirds of the batter into the prepared pan. Drop spoonfuls of the cinnamon mixture over the batter, then cover with the remaining batter
- Use a knife to swirl the cinnamon mixture throughout the batter
- Bake for 22 to 25 minutes until the edges are golden and a toothpick inserted comes out clea
- Let the bars cool completely in the pan, then drizzle with melted coconut butter or Greek yogurt mixed with maple syrup
Notes
For nut-free, substitute almond flour with oat flour.
For a vegan version, replace eggs with flax eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons of water).
These bars can be frozen for up to three months.
