Ingredients

15 oz Full-Fat Canned Coconut Milk
1/2 cup Fresh Lime Juice
1 tablespoon Lime Zest
1/3 cup Pure Maple Syrup or Monk Fruit
1 teaspoon Vanilla Extract
1 pinch Sea Salt


Instructions

  1. Zest two large limes before juicing them
  2. In a large mixing bowl or a high-speed blender, combine the coconut milk, fresh lime juice, lime zest, maple syrup, vanilla extract, and sea salt
  3. Whisk vigorously or blend on low speed for 30 seconds
  4. Pour the mixture into BPA-free popsicle molds, leaving space at the top
  5. Tap the molds on the countertop to remove air bubbles
  6. Insert the sticks and freeze for at least 6 hours, preferably overnight

Notes

For a lighter version, substitute half of the coconut milk with coconut water.

For a keto version, replace the maple syrup with liquid monk fruit or stevia drops.
