Ingredients
15 oz Full-Fat Canned Coconut Milk
1/2 cup Fresh Lime Juice
1 tablespoon Lime Zest
1/3 cup Pure Maple Syrup or Monk Fruit
1 teaspoon Vanilla Extract
1 pinch Sea Salt
Instructions
- Zest two large limes before juicing them
- In a large mixing bowl or a high-speed blender, combine the coconut milk, fresh lime juice, lime zest, maple syrup, vanilla extract, and sea salt
- Whisk vigorously or blend on low speed for 30 seconds
- Pour the mixture into BPA-free popsicle molds, leaving space at the top
- Tap the molds on the countertop to remove air bubbles
- Insert the sticks and freeze for at least 6 hours, preferably overnight
