Ingredients
12 oz Whole Grain or Chickpea Pasta
1/2 cup Plain Greek Yogurt
1 cup Fresh Cilantro, packed
3 tablespoons Fresh Lime Juice
2 tablespoons Extra Virgin Olive Oil
1 teaspoon Raw Honey or Maple Syrup
1 cup Black Beans, rinsed
1 medium Red Bell Pepper, diced
1/2 cup Sweet Corn, Fresh or Froze
Sea Salt and Cumin, to taste
Instructions
- Cook the Pasta: Bring a large pot of filtered water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse with cool water
- Prepare the Creamy Dressing: Blend the Greek yogurt, fresh cilantro, lime juice, olive oil, honey, and cumin until smooth and vibrant
- Chop the Vegetables: Finely dice the red bell pepper and rinse the black beans and cor
