1.5 lbs Chicken Thighs (Skinless, Boneless)
10 oz Cremini or Button Mushrooms (Sliced)
6–8 Fresh Garlic Cloves (Minced)
2 tbsp Avocado Oil
1 cup Full-Fat Coconut Milk (Canned)
1/2 cup Chicken Bone Broth
1 tbsp Fresh Thyme and Rosemary (Chopped)
Sea Salt and Black Pepper (To taste)
2 cups Spinach or Kale (Optional)
Instructions
- Pat the chicken thighs dry and season with sea salt and black pepper
- Heat avocado oil in a skillet and sear chicken thighs for 5-6 minutes per side until golde
- Remove chicken, add sliced mushrooms to the pan, and sauté for 5-7 minutes
- Add minced garlic and herbs, cooking for 1 minute
- Pour in chicken bone broth to deglaze the pan, then add coconut milk and simmer
- Return chicken to the skillet and simmer until cooked through
- Fold in spinach or kale during the last 2 minutes
