This Healthy Cucumber Strawberry Salad is a refreshing and nutritious dish that combines the crispness of cucumbers with the sweetness of strawberries, enhanced by a bright vinaigrette and fresh herbs.
Ingredients
2 Large English Cucumber
2 Cups Fresh Strawberries
1/4 Cup Red Onio
1/4 Cup Fresh Mint Leaves
3 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Balsamic Vinegar
1 Tablespoon Raw Honey or Maple Syrup
Sea Salt & Black Pepper to Taste
Instructions
- Wash the cucumbers and strawberries thoroughly. Slice cucumbers into 1/4-inch rounds
- Hull and slice the strawberries vertically
- In a bowl, whisk together olive oil, balsamic vinegar, honey (or maple syrup), salt, and pepper until emulsified
- Soak the sliced onions in the vinaigrette for 5 minutes
- Combine cucumbers and strawberries in a large bowl, then pour the vinaigrette with onions over them. Toss gently
- Just before serving, fold in chopped mint
Notes
Chill cucumbers but serve strawberries at room temperature for best flavor.
