Description

This Healthy Deviled Egg Potato Salad combines the creamy, tangy goodness of a traditional deviled egg with the hearty texture of perfectly cooked potatoes. It's made healthier with avocado oil mayo and Greek yogurt, making it lighter and more nourishing while retaining nostalgic flavors. Ingredients

2 pounds Yukon Gold or red potatoes, scrubbed and cubed
6 large pasture-raised eggs, hard-boiled and peeled
1/2 cup plain, full-fat Greek yogurt
1/4 cup avocado oil mayonnaise
2 tablespoons yellow or Dijon mustard
1 teaspoon raw honey
2 large stalks celery, finely diced
1/4 cup red onion, finely minced
2 tablespoons fresh chives or dill, chopped
Smoked paprika, to taste
Sea salt, to taste
Black pepper, to taste


Instructions

  1. Prepare the Potatoes: Place cubed potatoes in a large pot, cover with cold salted water, bring to a boil, then simmer for 10-12 minutes until tender. Drain and cool
  2. Hard-Boil the Eggs: Boil eggs for 10 minutes, then transfer to an ice bath to cool
  3. Separate and Mash the Yolks: Peel eggs, slice in half, and place yolks in a bowl. Chop egg whites and set aside
  4. Create the Creamy Dressing: Mash yolks and mix with Greek yogurt, avocado oil mayo, mustard, honey, salt, and pepper until smooth
  5. Combine the Ingredients: In mixing bowl, combine cooled potatoes, chopped egg whites, celery, and red onio
  6. Fold Everything Together: Add the dressing to the potato mixture and fold gently
  7. Garnish and Chill: Sprinkle with chives and smoked paprika. Refrigerate for at least an hour before serving

Notes

For a dairy-free version, replace Greek yogurt with more avocado mayo.

For added flavor, consider adding jalapeño or cayenne pepper.
