Ingredients
1.5 cups Greek Yogurt
4 large Pasture-Raised Eggs
1/2 cup Monk Fruit Sweetener or Maple Syrup
4 tablespoons Arrowroot Powder or Cornstarch
1 teaspoon Pure Vanilla Extract
1 tablespoon Lemon Zest
1/2 teaspoon Cream of Tartar
Instructions
- Preheat your oven to 320°F (160°C) and line a cake pan with parchment paper
- In a bowl, whisk together the Greek yogurt, egg yolks, vanilla extract, and sweetener. Sift in the arrowroot and mix until smooth
- In another bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add some sweetener if desired and continue beating until stiff peaks form
- Gently fold a third of the egg whites into the yogurt mixture, then fold in the rest carefully to keep the air bubbles
- Pour the batter into the prepared pan and place it in a larger baking dish filled with hot water. Bake for 45-50 minutes until golde
- Turn off the oven and let the cake cool inside with the door slightly open for 10 minutes
- Once cool, refrigerate for at least 2 hours before serving
