4 large Pasture-Raised Eggs
1/2 cup Monk Fruit Sweetener or Maple Syrup
4 tablespoons Arrowroot Powder or Cornstarch
1 teaspoon Pure Vanilla Extract
1 tablespoon Lemon Zest
1/2 teaspoon Cream of Tartar


Instructions

  1. Preheat your oven to 320°F (160°C) and line a cake pan with parchment paper
  2. In a bowl, whisk together the Greek yogurt, egg yolks, vanilla extract, and sweetener. Sift in the arrowroot and mix until smooth
  3. In another bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add some sweetener if desired and continue beating until stiff peaks form
  4. Gently fold a third of the egg whites into the yogurt mixture, then fold in the rest carefully to keep the air bubbles
  5. Pour the batter into the prepared pan and place it in a larger baking dish filled with hot water. Bake for 45-50 minutes until golde
  6. Turn off the oven and let the cake cool inside with the door slightly open for 10 minutes
  7. Once cool, refrigerate for at least 2 hours before serving

Notes

This recipe can be customized with dairy-free yogurt, other sweeteners, or flavor infusions.
