Ingredients
2 cups Fresh Blueberries
1 cup Full-Fat Greek Yogurt
2 tablespoons Pure Maple Syrup
1 teaspoon Vanilla Bean Paste
1 cup 70% Dark Chocolate
1 tablespoon Coconut Oil
A Pinch Sea Salt
Instructions
- Gently wash your blueberries in cold water. Spread them out on a clean kitchen towel and pat them completely dry
- In a medium mixing bowl, whisk together the Greek yogurt, maple syrup, and vanilla bean paste until smooth and glossy
- Fold the dry blueberries into the yogurt mixture using a rubber spatula
- Line a large baking sheet with parchment paper. Drop mounds of the berry-yogurt mixture onto the sheet, ensuring they are spaced out
- Place the baking sheet in the freezer for at least 2 hours
- Melt the dark chocolate and coconut oil together in a double boiler or microwave until velvety and fluid
- Remove the frozen clusters from the freezer. Dip each cluster into the melted chocolate and place them back onto the parchment paper
- Return the finished clusters to the freezer for another 30 minutes to ensure the chocolate is set
Notes
Ensure your yogurt is chilled to prevent the blueberries from warming up.
Sprinkle a tiny pinch of Maldon sea salt over the chocolate after dipping for added flavor.
