Ingredients
2 cups Old Fashioned Rolled Oats
1/4 cup Cold-Pressed Coconut Oil
1/3 cup Raw Honey or Maple Syrup
1 teaspoon Ground Cinnamo
1.5 cups Plain Greek Yogurt
1/2 cup Fresh Blueberries and Raspberries
1 teaspoon Pure Vanilla Extract
Instructions
- In a large mixing bowl, combine the rolled oats, cinnamon, and a pinch of sea salt
- Pour the melted coconut oil and raw honey over the oat mixture and fold together until evenly coated
- Line a muffin tin with silicone liners and distribute the granola mixture evenly across 12 cups, pressing firmly
- Freeze the muffin tin for at least 30 minutes to set the base
- Whisk together Greek yogurt and vanilla extract in a separate bowl
- Remove the tin from the freezer, fill each granola cup with yogurt, and top with fresh berries
- Return to the freezer for 2-3 hours until the yogurt is firm
- Pop the cups out of the liners and let sit for 2 minutes before serving
Notes
Ensure the yogurt is thick; strain it if necessary.
Use silicone liners for easy removal.
Press the granola base firmly to prevent crumbling.
