1 cup Full-Fat Plain Greek Yogurt
1 cup Fresh or Frozen Blueberries
2 tablespoons Freshly Squeezed Lemon Juice
1 teaspoon Lemon Zest
2 tablespoons Pure Maple Syrup
1 teaspoon Vanilla Extract


Instructions

  1. Begin by creating the blueberry base. In a small saucepan over low heat, combine the blueberries with a tablespoon of maple syrup and a splash of lemon juice
  2. Simmer the berries for about five minutes until they burst and release their natural juices, forming a thick compote. Set this aside to cool completely
  3. In a medium mixing bowl, whisk together the Greek yogurt, the remaining maple syrup, the lemon juice, lemon zest, and vanilla extract until the mixture is smooth and aerated
  4. Once the blueberry mixture has cooled, gently fold it into the yogurt mixture. Leave beautiful purple swirls throughout the white yogurt
  5. Carefully pour the mixture into your favorite popsicle molds, leaving a tiny bit of space at the top for expansion as they freeze
  6. Insert the popsicle sticks and place the molds in the freezer for at least four to six hours, or until they are completely firm
  7. To unmold, run the bottom of the popsicle molds under warm water for ten seconds to loosen the edges before gently pulling them out

Notes

Always use room-temperature yogurt for a silkier texture.

Ensure the blueberry mixture is fully cooled before adding it to the yogurt.

If you want a truly smooth experience, you can blend the entire mixture in a high-speed blender before freezing.
