Healthy Greek Yogurt Blueberry Lemon Popsicles that combine high-protein Greek yogurt with fresh blueberries and zesty lemon for a refreshing, nutrient-dense snack.
Ingredients
1 cup Full-Fat Plain Greek Yogurt
1 cup Fresh or Frozen Blueberries
2 tablespoons Freshly Squeezed Lemon Juice
1 teaspoon Lemon Zest
2 tablespoons Pure Maple Syrup
1 teaspoon Vanilla Extract
Instructions
- Begin by creating the blueberry base. In a small saucepan over low heat, combine the blueberries with a tablespoon of maple syrup and a splash of lemon juice
- Simmer the berries for about five minutes until they burst and release their natural juices, forming a thick compote. Set this aside to cool completely
- In a medium mixing bowl, whisk together the Greek yogurt, the remaining maple syrup, the lemon juice, lemon zest, and vanilla extract until the mixture is smooth and aerated
- Once the blueberry mixture has cooled, gently fold it into the yogurt mixture. Leave beautiful purple swirls throughout the white yogurt
- Carefully pour the mixture into your favorite popsicle molds, leaving a tiny bit of space at the top for expansion as they freeze
- Insert the popsicle sticks and place the molds in the freezer for at least four to six hours, or until they are completely firm
- To unmold, run the bottom of the popsicle molds under warm water for ten seconds to loosen the edges before gently pulling them out
Notes
Always use room-temperature yogurt for a silkier texture.
Ensure the blueberry mixture is fully cooled before adding it to the yogurt.
If you want a truly smooth experience, you can blend the entire mixture in a high-speed blender before freezing.
