Ingredients

34 medium Zucchini, sliced into half-moons or ribbons
1 large English Cucumber, sliced
1 pint Cherry Tomatoes, halved
1/2 small Red Onion, thinly sliced
1/2 cup Kalamata Olives, pitted and halved
1/2 cup Feta Cheese, crumbled
1/4 cup Extra Virgin Olive Oil
2 tablespoons Fresh Lemon Juice
1 teaspoon Dried Oregano
Sea Salt & Black Pepper, to taste


Instructions

  1. Prepare the Zucchini: Wash and slice zucchini into thin half-moons
  2. Chop the Vegetables: Slice the cucumber and halved the cherry tomatoes. Thinly slice the red onio
  3. Add the Aromatics: Toss in the Kalamata olives, and add herbs if desired
  4. Whisk the Dressing: Combine olive oil, lemon juice, oregano, salt, and pepper in a bowl
  5. Combine and Toss: Pour the dressing over the vegetables and toss to coat
  6. Add the Finishing Touch: Gently fold in the crumbled feta cheese
  7. Chill and Serve: Let the salad sit in the refrigerator to meld the flavors if desired

Notes

Using fresh lemon juice is recommended over bottled juice.
