Ingredients
1.5 lbs Wild-Caught Large Shrimp (16/20 count)
1 small Fresh Pineapple
3 tablespoons Avocado Oil
1 tablespoon Organic Honey or Maple Syrup
2 tablespoons Fresh Lime Juice
3 cloves Garlic Cloves
1 teaspoon Smoked Paprika
1/2 teaspoon Red Pepper Flakes
Sea Salt and Black Pepper to taste
1/4 cup Fresh Cilantro
Instructions
- Soak wooden skewers in water for at least 30 minutes
- In a large glass bowl, whisk together the avocado oil, lime juice, honey, minced garlic, smoked paprika, red pepper flakes, salt, and pepper
- Add the cleaned shrimp to the bowl and toss gently to coat. Let marinate for 15-20 minutes
- Assemble the skewers by alternating marinated shrimp and fresh pineapple cubes
- Preheat the grill to medium-high heat and lightly oil the grates
- Grill the skewers for 2-3 minutes per side until the shrimp are opaque and the pineapple has char marks
- Remove from heat and garnish with fresh cilantro and lime juice
