4 Medium Zucchinis
1 lb Grass-Fed Ground Beef
1 Tablespoon Avocado Oil
1 Small Red Onio
3 Cloves Garlic
1 Cup Bell Peppers
1/2 Cup Crushed Tomatoes
1 Teaspoon Dried Oregano
1/2 Teaspoon Smoked Paprika
1/2 Cup Shredded Mozzarella or Feta
Fresh Parsley
Instructions
- Preheat your oven to 400°F (200°C). Wash zucchinis and slice them in half lengthwise, scoop out flesh to create a hollow 'boat' shape
- Heat avocado oil in a large skillet over medium-high heat. Add ground beef, searing until browned
- Add diced red onion, minced garlic, bell peppers, and scooped-out zucchini flesh. Sauté for about 5 minutes until softened
- Stir in crushed tomatoes, oregano, smoked paprika, salt, and pepper. Let it simmer for 5-7 minutes
- Place zucchini shells on a parchment-lined baking sheet, fill with beef mixture, and top with cheese
- Bake for 18-20 minutes until zucchini is tender and cheese is bubbling
- Remove and garnish with fresh parsley and a drizzle of olive oil
