These Healthy Hidden Veggie and Fruit Popsicles offer a burst of refreshing tropical flavor and a creamy texture that hides a secret stash of nutrient-dense vegetables. Packed with whole, real food ingredients, these popsicles are both nutritious and kids-approved.
Ingredients
2 cups Frozen Mango Chunks
1 cup Fresh Strawberries
1 cup Fresh Baby Spinach (packed)
1/2 cup Steamed Carrots (cooled)
1.5 cups Coconut Water or Unsweetened Almond Milk
2–3 tablespoons Pure Maple Syrup or Raw Honey
1/2 cup Full-Fat Greek Yogurt or Coconut Cream
1 tablespoon Fresh Lime Juice
Instructions
- Start by lightly steaming your carrots until they are soft. Let them cool completely before using
- Place the frozen mango, fresh strawberries, baby spinach, and cooled carrots into a high-speed blender
- Pour in the coconut water, Greek yogurt, lime juice, and your choice of maple syrup or honey
- Blend the mixture on low and gradually increase to high speed for at least 60 seconds until smooth
- Taste the mixture and adjust sweetness if necessary
- Pour the mixture into popsicle molds, leaving a quarter-inch of space at the top
- Place the lids on the molds and insert sticks, then freeze for at least 6 hours or overnight
- Once frozen, run the mold under warm water for 10-15 seconds to loosen and serve
Notes
For a vegan version, substitute Greek yogurt with coconut yogurt.
To avoid flecks of spinach, use a high-speed blender for a smoother texture.
