1 lb Chicken Breast
1/4 cup Fresh Lime Juice
2 tbsp Raw Honey
2 tbsp Extra Virgin Olive Oil
2 cloves Fresh Garlic, minced
1 Ripe Mango, diced
1/2 Red Onion, diced
1/4 cup Fresh Cilantro, chopped
Sea Salt, to taste
Black Pepper, to taste


Instructions

  1. Prepare the Marinade: In a small bowl, whisk together the olive oil, lime juice, honey, minced garlic, salt, and pepper
  2. Marinate the Chicken: Place the chicken breasts in a shallow dish or reusable silicone bag. Pour the marinade over the meat and let sit for at least 15 minutes
  3. Construct the Salsa: Dice the mango, red onion, and cilantro. Toss them in a clean bowl with a squeeze of lime and a pinch of salt
  4. Cook the Chicken: Heat a large skillet over medium-high heat with a teaspoon of olive oil. Sear the chicken for 6-7 minutes per side until the internal temperature reaches 165°F (74°C). Alternatively, bake at 400°F (200°C) for 20 minutes
  5. Rest the Meat: Let the chicken rest on a cutting board for 5 minutes before slicing
  6. Assemble and Serve: Slice the chicken into strips, plate it, and top it with the fresh mango salsa

Notes

Do not over-marinate the chicken, as lime juice can change the texture if left too long.

Ensure your skillet is hot before adding the chicken to create a proper sear.
