Ingredients
1.5 lbs Wild-Caught Large Shrimp (peeled and deveined)
3 tablespoons Extra Virgin Olive Oil
1 large Fresh Lemon (juice & zest)
4 cloves Fresh Garlic (minced)
2 tablespoons Fresh Parsley (finely chopped)
1 teaspoon Fresh Oregano (finely chopped)
1/2 teaspoon Sea Salt
1/4 teaspoon Black Pepper
Pinch Red Pepper Flakes (optional)
Instructions
- Rinse the shrimp under cold water and pat them dry with a paper towel
- Whisk together olive oil, lemon juice, lemon zest, garlic, parsley, oregano, salt, pepper, and red pepper flakes in a small bowl
- Marinate the shrimp for 15-30 minutes in the refrigerator
- If using wooden skewers, soak them in water for 20 minutes. Thread the shrimp onto the skewers
- Preheat the grill to medium-high heat, brushing the grates with a bit of avocado oil
- Grill the skewers for 2-3 minutes per side until the shrimp are opaque and slightly charred
- Remove from heat and garnish with fresh herbs and a squeeze of lemon juice
Notes
Use Jumbo or Large shrimp for better juiciness on the grill.
Double-skewer the shrimp for easier flipping.
Zest the lemon before juicing for maximum flavor.
