Ingredients
2 cups Chicken Breast
1 cup Cucumber
1 cup Cherry Tomatoes
1/2 cup Red Onio
1/2 cup Kalamata Olives
1/2 cup Feta Cheese
1/4 cup Fresh Parsley
3 tablespoons Extra Virgin Olive Oil
1 large Lemon Juice
1 teaspoon Dried Oregano
Sea Salt to taste
Black Pepper to taste
Instructions
- Season chicken breasts with sea salt, pepper, and oregano. Sear in a pan or bake at 375°F until cooked through, then dice
- Dice cucumbers, halve cherry tomatoes, slice red onion, and mince parsley
- Whisk together olive oil, lemon juice, oregano, salt, and pepper in a bowl
- Combine chicken, cucumbers, tomatoes, onion, olives, and feta in a large bowl and toss with the dressing
- Garnish with fresh parsley and serve
