Ingredients
1.5 lbs Boneless, Skinless Chicken Breasts (cubed)
3 medium Fresh Zucchini (sliced into half-moons)
1 cup Cherry Tomatoes (halved)
1 small Red Onion (sliced into wedges)
3 tbsp Extra Virgin Olive Oil or Avocado Oil
1 tsp Dried Oregano
1 tsp Dried Thyme
4 cloves Fresh Garlic (minced)
1 large Lemon (juiced and zested)
Fresh Parsley (to taste)
Feta Cheese (optional, to taste)
Instructions
- Preheat the oven to 400°F (200°C) and prepare a large rimmed baking sheet or deep ceramic baking dish
- In a large mixing bowl, toss the cubed chicken with 1 tablespoon of olive oil, half the minced garlic, lemon zest, and a pinch of sea salt. Let it sit for 10 minutes
- Place the sliced zucchini, cherry tomatoes, and red onion wedges into the baking dish. Drizzle with remaining olive oil and lemon juice. Sprinkle dried oregano and thyme
- Add the marinated chicken to the dish with the vegetables and toss everything together until all pieces are coated
- Spread the mixture in a single layer in the baking dish and bake for 20 to 25 minutes until the chicken reaches an internal temperature of 165°F and the zucchini is tender
- Garnish with fresh parsley and crumbled feta while serving
