1.5 lbs Boneless, Skinless Chicken Breasts (cubed)
3 medium Fresh Zucchini (sliced into half-moons)
1 cup Cherry Tomatoes (halved)
1 small Red Onion (sliced into wedges)
3 tbsp Extra Virgin Olive Oil or Avocado Oil
1 tsp Dried Oregano
1 tsp Dried Thyme
4 cloves Fresh Garlic (minced)
1 large Lemon (juiced and zested)
Fresh Parsley (to taste)
Feta Cheese (optional, to taste)


Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a large rimmed baking sheet or deep ceramic baking dish
  2. In a large mixing bowl, toss the cubed chicken with 1 tablespoon of olive oil, half the minced garlic, lemon zest, and a pinch of sea salt. Let it sit for 10 minutes
  3. Place the sliced zucchini, cherry tomatoes, and red onion wedges into the baking dish. Drizzle with remaining olive oil and lemon juice. Sprinkle dried oregano and thyme
  4. Add the marinated chicken to the dish with the vegetables and toss everything together until all pieces are coated
  5. Spread the mixture in a single layer in the baking dish and bake for 20 to 25 minutes until the chicken reaches an internal temperature of 165°F and the zucchini is tender
  6. Garnish with fresh parsley and crumbled feta while serving

Notes
