Ingredients

1 large Ripe Avocado

1 can (15 oz) Black Beans, rinsed
1 cup Corn, Roasted or Fresh
1 cup Cherry Tomatoes, halved
Fresh Cilantro and Sliced Radishes, to taste
Instructions
- In a medium bowl, pat the shrimp dry and toss with smoked paprika, cumin, garlic powder, salt, and pepper
- Heat avocado oil in a large skillet over medium-high heat and sear the shrimp for 2-3 minutes per side until opaque and pink
- In a blender, combine avocado, Greek yogurt, lime juice, cilantro, and honey, then blend until smooth
- Warm the cooked rice and black beans while slicing the cherry tomatoes and radishes
- In bowls, assemble rice, shrimp, black beans, corn, and tomatoes; drizzle with crema and garnish with cilantro and radishes
