Description

Ingredients

16 oz Mixed Mushrooms
2 cups cooked Quinoa or Farro
2 tbsp Avocado Oil
2 large handfuls Fresh Spinach
3 cloves Garlic Cloves
1 tsp Maple Syrup
1 tbsp Tamari or Coconut Aminos
1 ripe Fresh Avocado
2 tbsp Pumpkin Seeds


Instructions

  1. Cook quinoa or farro according to package instructions, keeping warm
  2. Heat avocado oil in a skillet, add sliced mushrooms, and sauté until browned
  3. Add minced garlic, sauté until fragrant, then add tamari and maple syrup, mixing well
  4. Stir in fresh spinach until just wilted
  5. Divide grains into bowls, top with mushroom-spinach mixture
  6. Slice avocado and place on top, sprinkle with pumpkin seeds and sea salt
