Description

Healthy No-Bake Peanut Butter Granola Bars are a quick and easy snack that provides a satisfying chew and a rich nutty flavor without the need for baking. Made with simple, whole-food ingredients, these bars offer a clean energy source and stay fresh for up to a week.


Ingredients

2.5 cups Old-Fashioned Rolled Oats
1 cup Natural Peanut Butter
0.5 cup Pure Maple Syrup
2 tablespoons Coconut Oil
1 teaspoon Vanilla Extract
0.25 teaspoon Sea Salt
0.5 cup Dark Chocolate Chips


Instructions

  1. Line an 8×8-inch square baking pan with parchment paper
  2. In a large microwave-safe bowl, combine the natural peanut butter, maple syrup, and melted coconut oil. Heat for 30 seconds and whisk until smooth
  3. Stir in the vanilla extract and sea salt
  4. Add the rolled oats and fold until thoroughly coated
  5. Cool for 2 minutes before folding in the chocolate chips
  6. Transfer the mixture to the prepared pan and press down firmly
  7. Chill in the refrigerator for at least 2 hours or freeze for 45 minutes
  8. Lift out of the pan using parchment paper and slice into bars

Notes

To keep bars from crumbling, press them firmly into the pan.

Add an extra tablespoon of coconut oil if the mixture is too dry.
