Ingredients
2.5 cups Rolled Oats (Gluten-free if needed)
2 large Fresh Apples (Granny Smith)
1/2 cup Pure Maple Syrup
1/3 cup Extra Virgin Olive Oil
2 large Eggs
1 tablespoon Ground Cinnamo
1.5 teaspoons Baking Powder
1/2 teaspoon Sea Salt
1 teaspoon Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease an 8-inch springform pan or square baking dish with Coconut Oil
- Pulse half of your rolled oats into a flour-like consistency and mix with the remaining whole oats in a large bowl
- Whisk the baking powder, cinnamon, and sea salt into the oats
- In a separate bowl, whisk together the eggs, maple syrup, olive oil, and vanilla extract for two minutes
- Gently combine the wet and dry ingredients using a spatula
- Fold in the diced apples, ensuring they are well-coated in the batter
- Pour the batter into the prepared pan and bake for 35 to 40 minutes
- Allow the cake to cool in the pan for at least 15 minutes
Notes
For a vegan version, replace the eggs with two flax eggs.
