Description

Healthy Peanut Butter Frozen Yogurt Bars that combine the tangy profile of Greek yogurt with natural peanut butter, topped with a chocolate shell.


Ingredients

Scale

2 cups Greek Yogurt
1 cup Natural Peanut Butter
1/4 cup Pure Maple Syrup
1 tablespoon Vanilla Bean Paste or Extract
1/2 cup Dark Chocolate Chips
1 tablespoon Coconut Oil
Flaky Sea Salt to taste


Instructions

  1. In a large mixing bowl, combine the Greek yogurt, peanut butter, maple syrup, and vanilla. Mix until smooth
  2. Line an 8×8 inch baking pan with parchment paper. Pour the yogurt mixture into the pan and smooth the top
  3. Freeze the mixture for 3-4 hours until firm
  4. Lift the mixture out of the pan and cut into 10-12 bars
  5. Melt the dark chocolate chips and coconut oil together until smooth
  6. Dip each frozen bar into the chocolate coating and sprinkle with sea salt
  7. Return the bars to the freezer for 20 minutes to set before serving

Notes

For a nut-free option, use sunflower seed butter.

To lower the glycemic index, substitute monk fruit sweetener for maple syrup.
