Healthy Peanut Butter Frozen Yogurt Bars that combine the tangy profile of Greek yogurt with natural peanut butter, topped with a chocolate shell.
Ingredients

2 cups Greek Yogurt
1 cup Natural Peanut Butter
1/4 cup Pure Maple Syrup
1 tablespoon Vanilla Bean Paste or Extract
1/2 cup Dark Chocolate Chips
1 tablespoon Coconut Oil
Flaky Sea Salt to taste
Instructions
- In a large mixing bowl, combine the Greek yogurt, peanut butter, maple syrup, and vanilla. Mix until smooth
- Line an 8×8 inch baking pan with parchment paper. Pour the yogurt mixture into the pan and smooth the top
- Freeze the mixture for 3-4 hours until firm
- Lift the mixture out of the pan and cut into 10-12 bars
- Melt the dark chocolate chips and coconut oil together until smooth
- Dip each frozen bar into the chocolate coating and sprinkle with sea salt
- Return the bars to the freezer for 20 minutes to set before serving
Notes
For a nut-free option, use sunflower seed butter.
To lower the glycemic index, substitute monk fruit sweetener for maple syrup.
