Ingredients
4 portions 6-ounce Salmon Fillets
1/2 cup Fresh Pineapple Juice
2 tablespoons Raw Honey or Maple Syrup
2 tablespoons Coconut Aminos
1 teaspoon Fresh Ginger (grated)
2 cloves Garlic (minced)
1 tablespoon Avocado Oil
1/4 teaspoon Crushed Red Pepper (optional)
Fresh Cilantro (for garnish)
Instructions
- Remove the salmon fillets from the refrigerator and let them sit at room temperature for about 10 minutes. Pat them dry with a paper towel
- In a small saucepan over medium heat, combine the pineapple juice, honey (or maple syrup), coconut aminos, minced garlic, and grated ginger. Whisk constantly as it comes to a gentle simmer
- Allow the glaze to simmer for about 8 to 10 minutes until it reduces by half and becomes syrupy
- Lightly brush the salmon fillets with avocado oil and season with a pinch of sea salt and black pepper
- Preheat the oven to 400°F (200°C). Place the fillets on a parchment-lined baking sheet and bake for about 12 to 15 minutes
- About 5 minutes before the salmon is finished cooking, brush the pineapple mixture over the top of each fillet
- Remove the fish from the oven, let it rest for two minutes, and garnish with fresh cilantro
Notes
Using fresh ginger instead of powdered version for a more vibrant flavor.
Use a meat thermometer to check for an internal temperature of 145°F (63°C).
