Ingredients
1.5 lbs Baby Potatoes or Yukon Golds
2 tablespoons Olive Oil (for roasting potatoes)
1 teaspoon Smoked Paprika
1 teaspoon Garlic Powder
1/2 teaspoon Dried Rosemary
Sea Salt and Freshly Ground Black Pepper (to taste)
1 cup Cherry Tomatoes, halved
1/2 cup Cucumber, diced
1/4 cup Red Onion, thinly sliced
1/4 cup Fresh Parsley, chopped
1 medium Avocado, diced
3 tablespoons Olive Oil (for dressing)
2 tablespoons Fresh Lemon Juice
1 teaspoon Dijon Mustard
1 teaspoon Maple Syrup or Honey (optional)
1/2 teaspoon Dried Oregano
Instructions
- Preheat oven to 400°F (200°C) and prep the potatoes
- Toss potatoes with olive oil, smoked paprika, garlic powder, rosemary, sea salt, and pepper
- Spread the potatoes on a baking sheet and roast for 25-35 minutes until golden and crispy
- While potatoes roast, whisk together olive oil, lemon juice, Dijon mustard, optional sweetener, oregano, salt, and pepper for the dressing
- Prepare fresh toppings: halve tomatoes, dice cucumber, slice onion, chop parsley, and dice avocado
- Once potatoes are roasted, assemble by layering the fresh veggies on top
- Drizzle the dressing over the bowl and serve immediately
