2 tablespoons Olive Oil (for roasting potatoes)
1 teaspoon Smoked Paprika
1 teaspoon Garlic Powder
1/2 teaspoon Dried Rosemary
Sea Salt and Freshly Ground Black Pepper (to taste)
1 cup Cherry Tomatoes, halved
1/2 cup Cucumber, diced
1/4 cup Red Onion, thinly sliced
1/4 cup Fresh Parsley, chopped
1 medium Avocado, diced
3 tablespoons Olive Oil (for dressing)
2 tablespoons Fresh Lemon Juice
1 teaspoon Dijon Mustard
1 teaspoon Maple Syrup or Honey (optional)
1/2 teaspoon Dried Oregano


Instructions

  1. Preheat oven to 400°F (200°C) and prep the potatoes
  2. Toss potatoes with olive oil, smoked paprika, garlic powder, rosemary, sea salt, and pepper
  3. Spread the potatoes on a baking sheet and roast for 25-35 minutes until golden and crispy
  4. While potatoes roast, whisk together olive oil, lemon juice, Dijon mustard, optional sweetener, oregano, salt, and pepper for the dressing
  5. Prepare fresh toppings: halve tomatoes, dice cucumber, slice onion, chop parsley, and dice avocado
  6. Once potatoes are roasted, assemble by layering the fresh veggies on top
  7. Drizzle the dressing over the bowl and serve immediately
