Ingredients
2 cups Fresh or Frozen Raspberries
1 can (13.5 oz) Full-Fat Coconut Milk
1/4 cup Grade A Maple Syrup
1 tsp Pure Vanilla Extract
1 tbsp Fresh Lemon Juice
A pinch of Sea Salt
Instructions
- Rinse your fresh raspberries under cold water. If using frozen, allow them to thaw for 5 minutes
- In a blender, combine coconut milk, maple syrup, vanilla extract, lemon juice, and sea salt. Blend on high for 30 seconds until smooth
- Add raspberries to the blender. Blend until fully liquefied for smooth popsicles or pulse for a chunky texture
- Pour the mixture into popsicle molds, leaving a quarter-inch at the top
- Insert sticks and freeze for at least 4-6 hours or overnight
- Run the molds under warm water for 10-15 seconds to loosen popsicles and gently pull on the sticks to release

Use full-fat coconut milk for a creamier texture.
Taste the mixture before freezing; add more maple syrup if needed.
