Description

These Healthy Raspberry Coconut Milk Popsicles offer a creamy, tart, and refreshing way to cool down while nourishing your body with high-quality nutrients. Ingredients

2 cups Fresh or Frozen Raspberries
1 can (13.5 oz) Full-Fat Coconut Milk
1/4 cup Grade A Maple Syrup
1 tsp Pure Vanilla Extract
1 tbsp Fresh Lemon Juice
A pinch of Sea Salt


Instructions

  1. Rinse your fresh raspberries under cold water. If using frozen, allow them to thaw for 5 minutes
  2. In a blender, combine coconut milk, maple syrup, vanilla extract, lemon juice, and sea salt. Blend on high for 30 seconds until smooth
  3. Add raspberries to the blender. Blend until fully liquefied for smooth popsicles or pulse for a chunky texture
  4. Pour the mixture into popsicle molds, leaving a quarter-inch at the top
  5. Insert sticks and freeze for at least 4-6 hours or overnight
  6. Run the molds under warm water for 10-15 seconds to loosen popsicles and gently pull on the sticks to release

Notes

Use full-fat coconut milk for a creamier texture.

Taste the mixture before freezing; add more maple syrup if needed.

Store in an airtight container or silicone bag with parchment paper to prevent sticking.
