Description

This Healthy Single-Serve Personal Peach Cobbler delivers the perfect balance of sweet, juicy fruit and a crisp, golden topping without excess sugar.


Ingredients

1 cup Fresh or Frozen Peaches
3 tablespoons Oat Flour or Almond Flour
1 tablespoon Maple Syrup
1 tablespoon Melted Coconut Oil or Olive Oil
1/2 teaspoon Cinnamo
1/4 teaspoon Vanilla Extract
Pinch of Sea Salt


Instructions

  1. Preheat your oven to 375°F (190°C)
  2. Slice one large peach into thin wedges and place them into a small ramekin or oven-safe dish. Toss with 1/2 tablespoon of maple syrup, half the cinnamon, and the vanilla extract
  3. In a small bowl, combine the oat flour, remaining maple syrup, coconut oil, the rest of the cinnamon, and a pinch of salt to make a crumbly mixture
  4. Spread the crumble mixture evenly over the top of the seasoned peaches
  5. Bake for 18-22 minutes until the fruit juices bubble and the topping is golden brow
  6. Remove from the oven, let cool for 5 minutes, then serve

Notes

If using frozen peaches, thaw slightly before using.

For a vegan option, ensure the maple syrup is pure and use plant-based oil.
