1.5 pounds Chicken Breast
2 tablespoons Avocado Oil
1 Red Bell Pepper
1 Yellow Bell Pepper
1 can Organic Black Beans
1 cup Cor
0.5 medium Red Onio
Spices: Chili Powder, Cumin, Smoked Paprika, Garlic Powder, Sea Salt
0.5 cup Plain Greek Yogurt
Juice of 2 Limes
Fresh Cilantro
4 Whole Grain or Gluten-Free Tortillas
Instructions
- Season the chicken with the spice mixture
- Sear the chicken in avocado oil until golden brow
- Sauté the bell peppers and onions in the skillet
- Combine black beans and corn with sautéed vegetables
