Ingredients

2 cups Fresh Strawberries
1.5 cups Plain Greek Yogurt
4 ounces Softened Cream Cheese
1/4 cup Pure Maple Syrup
1 teaspoon Vanilla Bean Paste
1/2 cup Gluten-Free Graham Crackers (crushed)
1 tablespoon Melted Coconut Oil


Instructions

  1. Prepare the Strawberry Coulis: Blend fresh strawberries with one tablespoon of maple syrup until smooth
  2. Whip the Cheesecake Base: Combine Greek yogurt, softened cream cheese, remaining maple syrup, and vanilla bean paste. Mix until smooth
  3. Prepare the Crust: Crush graham crackers and mix with melted coconut oil
  4. Layer the Popsicles: In molds, layer the yogurt mixture and strawberry puree. Create a marble effect
  5. Add the Crust: Top with graham cracker mixture
  6. Freeze: Insert sticks and freeze for at least 6 hours
  7. Unmold: Run molds under warm water and gently pull out the popsicles

If fresh strawberries aren't available, thawed frozen strawberries work well.
