These Healthy Strawberry Watermelon Popsicles are a refreshing and nutritious treat perfect for summer days, made with real fruit and natural sweeteners.
Ingredients
4 cups Fresh Watermelon (cubed)
2 cups Fresh Strawberries (hulled)
2 tablespoons Fresh Lime Juice
1–2 tablespoons Raw Honey or Maple Syrup (optional)
Fresh Mint Leaves (optional for garnish)
Instructions
- Prepare the Fruit: Begin by dicing your fresh watermelon into small cubes, removing any large black seeds. Hull the strawberries and slice them in half
- Blend the Mixture: Place the watermelon cubes, strawberries, lime juice, and any chosen natural sweetener into a high-speed blender. Blend on high until smooth
- Taste Test: Sample the mixture before pouring. You may want to adjust sweetness by adding more honey
- Fill the Molds: Pour the fruit puree into popsicle molds, leaving a small space at the top
- Add the Sticks: Insert sticks into the molds once filled. Cover if needed
- Freeze: Freeze for at least 4-6 hours, preferably overnight
- Unmold and Enjoy: Run molds under warm water briefly to release popsicles
Notes
Store in an airtight container for up to three weeks.
If using frozen fruit, add a bit of liquid for blending.
For creaminess, consider adding full-fat coconut milk.
