Description

This Healthy Summer Peach Blueberry Kale Salad balances nutrition and minimal effort, featuring kale, peaches, blueberries, and a simple dressing.


Ingredients

1 large bunch Curly or Lacinato Kale, stems removed and leaves finely chopped
2 large Fresh Peaches, sliced into thin wedges or bite-sized chunks
1 cup Blueberries, fresh and firm
1/2 small Red Onion, thinly sliced
1/2 cup Toasted Walnuts or Pecans
1/2 cup Goat Cheese or Feta, crumbled (optional)
3 tablespoons Extra Virgin Olive Oil
2 tablespoons Apple Cider Vinegar
1 tablespoon Pure Maple Syrup
Sea Salt and Black Pepper, to taste


Instructions

  1. In a small glass jar, combine the extra virgin olive oil, apple cider vinegar, pure maple syrup, salt, and pepper. Shake vigorously until emulsified
  2. Place the chopped kale in a large mixing bowl, drizzle half of the dressing over the leaves, and massage the kale for 2 to 3 minutes until tender
  3. Slice the peaches and red onions, ensuring blueberries are rinsed and dried
  4. Add the peaches, blueberries, and red onions to the bowl with the massaged kale and toss gently
  5. Sprinkle toasted walnuts and crumbled cheese over the top, drizzling remaining dressing if needed
  6. Give a final toss and serve immediately
