This Healthy Summer Peach Blueberry Kale Salad balances nutrition and minimal effort, featuring kale, peaches, blueberries, and a simple dressing.
Ingredients
1 large bunch Curly or Lacinato Kale, stems removed and leaves finely chopped
2 large Fresh Peaches, sliced into thin wedges or bite-sized chunks
1 cup Blueberries, fresh and firm
1/2 small Red Onion, thinly sliced
1/2 cup Toasted Walnuts or Pecans
1/2 cup Goat Cheese or Feta, crumbled (optional)
3 tablespoons Extra Virgin Olive Oil
2 tablespoons Apple Cider Vinegar
1 tablespoon Pure Maple Syrup
Sea Salt and Black Pepper, to taste
Instructions
- In a small glass jar, combine the extra virgin olive oil, apple cider vinegar, pure maple syrup, salt, and pepper. Shake vigorously until emulsified
- Place the chopped kale in a large mixing bowl, drizzle half of the dressing over the leaves, and massage the kale for 2 to 3 minutes until tender
- Slice the peaches and red onions, ensuring blueberries are rinsed and dried
- Add the peaches, blueberries, and red onions to the bowl with the massaged kale and toss gently
- Sprinkle toasted walnuts and crumbled cheese over the top, drizzling remaining dressing if needed
- Give a final toss and serve immediately
