Ingredients

Scale

8 oz Whole-Grain or Chickpea Macaroni
1 cup Bell Peppers (finely diced, mixed colors)
1 cup English Cucumber (finely diced)
1/2 cup Red Onion (finely diced)
1 cup Cherry Tomatoes (halved)

1/2 cup Greek Yogurt
1/4 cup Avocado Oil Mayonnaise
2 tbsp Apple Cider Vinegar
1 tbsp Maple Syrup
1 tsp Dried Mustard
Sea Salt to taste
1/4 cup Fresh Dill (chopped)
1/4 cup Fresh Parsley (chopped)

Instructions

  1. Step 1: Boil a large pot of water with a pinch of salt. Cook the macaroni according to package directions until al dente

  3. Step 3: In a small bowl, whisk together Greek yogurt, avocado oil mayo, apple cider vinegar, maple syrup, dried mustard, and sea salt to create the dressing
  4. Step 4: Drain and rinse the pasta under cold water to stop the cooking process
  5. Step 5: In a large bowl, combine the cooled pasta, chopped vegetables, and thawed peas
  6. Step 6: Pour the dressing over the pasta and vegetables, folding gently to combine
  7. Step 7: Fold in the chopped dill and parsley
  8. Step 8: Chill in the refrigerator for at least 30 minutes before serving
