Description

Healthy Watermelon Fries with Coconut Dip is a refreshing and nutritious snack that pairs crunchy watermelon sticks with a creamy coconut dip. Perfect for quick preparation and minimal cleanup.


Ingredients

1 medium-sized Seedless Watermelo
2 tablespoons Fresh Lime Juice
1 tablespoon Chili Lime Seasoning (optional)
1 cup Full-Fat Coconut Cream or Greek Yogurt
12 tablespoons Raw Honey or Pure Maple Syrup
1/2 teaspoon Vanilla Extract
1 teaspoon Fresh Lime Zest


Instructions

  1. Slice the ends off the watermelon and shave off the green rind
  2. Cut the watermelon into thick rounds and then slice into sticks resembling fries
  3. Place the watermelon sticks on a tray and squeeze fresh lime juice over them
  4. Mix the coconut dip by combining coconut cream, honey, vanilla extract, and lime zest in a bowl and whisking until smooth
  5. Transfer the coconut dip to a ramekin and serve alongside the watermelon fries

Notes

Use only the thick part of coconut cream for a stable dip.
