High-Protein Cheesecake Bites are a decadent yet nutritious dessert made with Greek yogurt and cream cheese, sweetened naturally and with a grain-free crust, providing a rich, tangy experience without the guilt.
Ingredients
1 cup Almond Flour
2 tbsp Melted Coconut Oil
2 tbsp Monk Fruit Sweetener
8 oz Low-Fat Cream Cheese
1 cup Plain Non-Fat Greek Yogurt
2 Large Organic Eggs
2 tsp Pure Vanilla Bean Paste
1 tsp Fresh Lemon Zest
Instructions
- Preheat your oven to 325°F (165°C). In a medium bowl, combine the almond flour, melted coconut oil, and monk fruit sweetener. Press firmly into the bottom of a lined mini-muffin tin. Bake for 8-10 minutes until lightly golden, then set aside to cool
- In a large mixing bowl, beat the cream cheese and monk fruit sweetener until smooth and fluffy
- Gently whisk in the Greek yogurt, vanilla bean paste, and lemon zest until well-combined
- Add the eggs one at a time, mixing on low speed just until incorporated
- Pour the cheesecake batter over the pre-baked crust, smooth the tops, and bake for 18-22 minutes until the edges are set but the centers have a gentle jiggle
- Turn off the oven and crack the door lightly. Let sit in the cooling oven for 10 minutes before moving to the counter to cool to room temperature, then refrigerate for at least 4 hours before serving
