Ingredients
2 tablespoons Extra Virgin Olive Oil
1 large Yellow Onion, finely diced
4 cloves Fresh Garlic, minced
3 cups Chickpeas, cooked
4 cups Vegetable Broth, low-sodium
2 Carrots, diced
2 Celery stalks, diced
4 cups Baby Spinach or Kale
Juice of 1 Lemo
1 teaspoon Smoked Paprika
1 teaspoon Cumi
Sea Salt, to taste
Black Pepper, to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, sautéing for 8 to 10 minutes until softened
- Stir in the minced garlic, smoked paprika, and cumin. Cook for 1 minute until fragrant
- Add the chickpeas and vegetable broth, bringing to a gentle boil. Reduce heat to low and let simmer for 20 minutes
- Optional: For a creamier texture, blend a portion of the soup before returning it to the pot
- Stir in the greens and let them wilt for about 2 minutes
- Remove from heat, add lemon juice, and season with salt and black pepper to taste
