2 Pasture-Raised Eggs
1/2 cup Pure Maple Syrup
1/4 cup Melted Coconut Oil
1 1/2 cups Oat Flour or Almond Flour
1 tsp Ceylon Cinnamo
1 tsp Baking Soda
1/2 tsp Sea Salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with Coconut Oil or line it with parchment paper
  2. Mash the ripe bananas in a large mixing bowl until smooth with a few small lumps remaining
  3. Add the cottage cheese, eggs, maple syrup, and melted coconut oil to the banana mixture and whisk until well combined
  4. In a separate bowl, sift together oat flour, cinnamon, baking soda, and sea salt
  5. Gently fold the dry ingredients into the wet ingredients until just combined
  6. Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a toothpick comes out clea
  7. Allow the bread to cool in the pan for at least 15 minutes before transferring to a wire rack
