Ingredients
3 ripe Bananas
1 cup Low-Sodium Cottage Cheese
2 Pasture-Raised Eggs
1/2 cup Pure Maple Syrup
1/4 cup Melted Coconut Oil
1 1/2 cups Oat Flour or Almond Flour
1 tsp Ceylon Cinnamo
1 tsp Baking Soda
1/2 tsp Sea Salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with Coconut Oil or line it with parchment paper
- Mash the ripe bananas in a large mixing bowl until smooth with a few small lumps remaining
- Add the cottage cheese, eggs, maple syrup, and melted coconut oil to the banana mixture and whisk until well combined
- In a separate bowl, sift together oat flour, cinnamon, baking soda, and sea salt
- Gently fold the dry ingredients into the wet ingredients until just combined
- Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a toothpick comes out clea
- Allow the bread to cool in the pan for at least 15 minutes before transferring to a wire rack
