Description

This high protein healthy keto vegetarian stir-fry delivers a punch of savory flavor and a satisfying, meaty texture using firm tofu and halloumi cheese, ensuring you stay full and focused without spiking your blood sugar.


Ingredients

14 ounces Extra Firm Tofu, pressed and cubed
8 ounces Halloumi Cheese, sliced into cubes
2 tablespoons Avocado Oil
3 cups Bok Choy, chopped
1 tablespoon Fresh Ginger, minced
1 tablespoon Fresh Garlic, minced
3 tablespoons Liquid Aminos
1 teaspoon Monk Fruit Sweetener, granulated
1 tablespoon Rice Vinegar
1 teaspoon Toasted Sesame Oil


Instructions

  1. Press the tofu between paper towels for at least five minutes to remove excess moisture, then cut both the tofu and halloumi into uniform half-inch cubes
  2. Heat the avocado oil in a large skillet over medium-high heat, add tofu and halloumi cubes in a single layer and cook undisturbed for 3-4 minutes until golden brown. Flip and repeat until all sides are crispy
  3. Push the protein to the edges of the pan, add the minced garlic and ginger to the center, and stir-fry for 30 seconds
  4. Toss in the chopped bok choy, incorporating it with the protein and aromatics, and cook for 2-3 minutes until the leaves wilt but the stems remain crisp
  5. In a small bowl, combine liquid aminos, monk fruit sweetener, rice vinegar, and toasted sesame oil. Pour over the ingredients in the skillet
  6. Stir everything together for one minute until the sauce thickens slightly and glazes the tofu and cheese, then remove from heat

Notes

For a vegan option, replace halloumi with extra tofu or use seitan.

You can store leftovers in an airtight glass container in the fridge for up to three days.
