Description
This high protein healthy keto vegetarian stir-fry delivers a punch of savory flavor and a satisfying, meaty texture using firm tofu and halloumi cheese, ensuring you stay full and focused without spiking your blood sugar.
Ingredients
14 ounces Extra Firm Tofu, pressed and cubed
8 ounces Halloumi Cheese, sliced into cubes
2 tablespoons Avocado Oil
3 cups Bok Choy, chopped
1 tablespoon Fresh Ginger, minced
1 tablespoon Fresh Garlic, minced
3 tablespoons Liquid Aminos
1 teaspoon Monk Fruit Sweetener, granulated
1 tablespoon Rice Vinegar
1 teaspoon Toasted Sesame Oil
Instructions
- Press the tofu between paper towels for at least five minutes to remove excess moisture, then cut both the tofu and halloumi into uniform half-inch cubes
- Heat the avocado oil in a large skillet over medium-high heat, add tofu and halloumi cubes in a single layer and cook undisturbed for 3-4 minutes until golden brown. Flip and repeat until all sides are crispy
- Push the protein to the edges of the pan, add the minced garlic and ginger to the center, and stir-fry for 30 seconds
- Toss in the chopped bok choy, incorporating it with the protein and aromatics, and cook for 2-3 minutes until the leaves wilt but the stems remain crisp
- In a small bowl, combine liquid aminos, monk fruit sweetener, rice vinegar, and toasted sesame oil. Pour over the ingredients in the skillet
- Stir everything together for one minute until the sauce thickens slightly and glazes the tofu and cheese, then remove from heat
Notes
For a vegan option, replace halloumi with extra tofu or use seitan.
You can store leftovers in an airtight glass container in the fridge for up to three days.
