Ingredients
3 Large Pasture-Raised Eggs
1/4 cup Cooked Turkey Sausage or Baco
1/2 cup Fresh Spinach
2 tablespoons Feta or Goat Cheese
1 tablespoon Avocado Oil
1 tablespoon Heavy Cream (optional)
Sea Salt and Black Pepper to taste
Instructions
- In a medium-sized glass bowl, crack the three large eggs. Add the heavy cream if using, along with a pinch of sea salt and freshly cracked black pepper. Whisk the mixture vigorously until it is uniform and slightly frothy
- In a non-stick skillet over medium heat, add the avocado oil. Once shimmering, add the chopped spinach and cooked turkey sausage. Sauté for about two minutes until the spinach is wilted
- Pour the egg mixture directly over the sautéed fillings. Use a spatula to gently push the cooked edges toward the center, allowing the raw egg to flow to the edges for about two minutes until the bottom is set but the top still looks slightly moist
- Sprinkle the feta or goat cheese evenly over one half of the eggs and fold the omelet over the filling. Hold for about thirty seconds to ensure it stays closed, then slide onto a warm plate
- Garnish with fresh herbs or sliced avocado before serving
Notes
For a dairy-free version, substitute heavy cream with unsweetened almond milk and omit the cheese.
