Ingredients
1.5 lbs Chicken Breast
4 cups Fresh Broccoli Florets
2 tablespoons Olive Oil
1 cup Full-Fat Greek Yogurt
4 ounces Cream Cheese
1.5 cups Sharp Cheddar Cheese
3 cloves Garlic Cloves
1 teaspoon Onion Powder
1/2 teaspoon Smoked Paprika
Sea Salt & Black Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Grease a large baking dish with a little bit of Olive Oil
- Heat the Olive Oil in a large skillet over medium-high heat. Add the diced Chicken Breast and sear until golden brown on all sides, then add the minced Garlic during the last minute
- Lightly steam the Broccoli Florets for about 3 minutes and set aside
- In a large mixing bowl, whisk together the Greek Yogurt, softened Cream Cheese, Onion Powder, Smoked Paprika, Sea Salt, and Black Pepper until smooth
- Fold the seared Chicken and steamed Broccoli into the creamy sauce until well coated
- Pour the mixture into the prepared baking dish, spreading it out evenly. Top with the shredded Sharp Cheddar Cheese
- Bake for 20-25 minutes until the cheese is bubbling and golden brow
- Let the casserole rest for 5 minutes before garnishing with fresh parsley or chives
