Ingredients

2 Sourdough or Whole Grain Bagels
2 Pasture-Raised Eggs
1 cup Fresh Mozzarella or Sharp Cheddar
2 tbsp Avocado Oil or Extra Virgin Olive Oil
1 cup Vibrant Vegetables (bell peppers, cherry tomatoes, baby spinach)
4 oz Nitrate-Free Turkey Sausage or Smoked Salmo
Fresh Herbs (basil, oregano, or chives)


Instructions

  1. Slice the bagels in half and brush with avocado oil
  2. Preheat oven to 375°F (190°C) and toast bagels for 4-5 minutes
  3. Spread tomato sauce or olive oil and garlic on the bagel halves and add fresh spinach
  4. Distribute the turkey sausage or smoked salmon and sprinkle with mozzarella cheese
  5. Crack each egg into the center of the bagel halves
  6. Bake for 8-12 minutes until cheese is bubbly and egg whites are set
  7. Garnish with salt, pepper, and fresh herbs before serving

Notes

For a crispy crust, you can toast the bagel face-down in a pan before adding toppings.
