Ingredients
1 cup Flax Seeds
1/2 cup Chia Seeds
1 cup Sunflower Seeds
1/2 cup Pumpkin Seeds (Pepitas)
1 cup Grated Carrots
1 cup Grated Zucchini
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Dried Rosemary
1 tsp Dried Thyme
1 tsp Sea Salt
2 tbsp Cold-Pressed Olive Oil
2/3 cup Water
Instructions
- Preheat your oven to 300°F (150°C) and line two large baking sheets with parchment paper
- Finely grate the carrots and zucchini, then squeeze out excess moisture from the zucchini using a kitchen towel
- In a large mixing bowl, combine flax seeds, chia seeds, sunflower seeds, pumpkin seeds, garlic powder, onion powder, dried herbs, and sea salt
- Add olive oil, grated vegetables, and water to the dry mixture and stir until well combined
- Allow the mixture to rest for 10 to 15 minutes to let the seeds hydrate
- Divide the mixture between the two baking sheets, place another parchment layer on top, and roll out the dough thinly
- Remove the top parchment and score the dough into squares or rectangles
- Bake for 40 minutes, flip the sheets, and bake for another 20 to 30 minutes until golden brow
- Let cool completely on a wire rack, then snap apart along the scored lines
