Ingredients
1.5 lbs Organic Chicken Breasts (boneless, skinless)
2 tbsp Avocado Oil (for searing)
1/4 cup Raw Honey or Pure Maple Syrup
1–2 tsp Red Chili Flakes or Cayenne Pepper
2 tbsp Apple Cider Vinegar or Fresh Lemon Juice
6 cups Mixed Spring Greens or Arugula
As desired Sliced Avocado, Cherry Tomatoes, Cucumber
1/4 cup Toasted Pumpkin Seeds or Sliced Almonds
Instructions
- Pat the chicken breasts dry, season with salt and pepper
- Whisk together honey, chili flakes, and vinegar until cohesive
- Heat avocado oil in a skillet, sear chicken for 6-7 minutes per side until cooked through
- In the last two minutes, pour half the glaze over the chicke
- Remove chicken, let rest for 5 mins; assemble greens and veggies in a bowl
- Slice chicken, layer on top of greens, drizzle remaining glaze, and add toppings
