1 Large English Cucumber
1 cup Roasted Garlic Hummus
1/2 cup Cherry Tomatoes
1/4 cup Kalamata Olives
2 tablespoons Fresh Dill
1 teaspoon Smoked Paprika
Instructions
- Wash the cucumber thoroughly and slice it into rounds approximately 1/2 inch thick
- Lay the cucumber slices on a paper towel and pat them dry
- Use a spoon or piping bag to place about one tablespoon of hummus onto each cucumber slice
- Top each hummus-covered cucumber slice with a cherry tomato slice and a few pieces of chopped olives
- Garnish with a sprinkle of smoked paprika and fresh dill
- Serve immediately
