1.5 lbs Boneless, Skinless Chicken Breasts
45 medium Fresh Jalapenos
4 oz Grass-fed Cream Cheese
1 cup Sharp Cheddar Cheese, shredded
2 tablespoons Avocado Oil
1 teaspoon Garlic Powder
1/2 teaspoon Smoked Paprika
Sea Salt & Cracked Black Pepper to taste
1/2 cup Unsweetened Almond Flour (Optional)


Instructions

  1. Pat the chicken breasts dry and cut them into uniform 2-inch cubes. Create small pockets in each piece
  2. Mix the cream cheese, cheddar cheese, jalapenos, garlic powder, and smoked paprika until combined
  3. Stuff each chicken pocket with the cheese mixture and secure if necessary
  4. Lightly coat the bites with avocado oil and roll them in almond flour if using
  5. For air fryer: Preheat to 375°F and cook for 12-15 minutes. For oven: Preheat to 400°F and bake for 18-22 minutes
  6. Allow to rest for 3-5 minutes before serving
