Ingredients

1 large head Fresh Cauliflower
3 tablespoons Grass-fed Butter
23 cloves Garlic Cloves, minced
2 tablespoons Full-fat Sour Cream
Sea Salt, to taste
1/2 teaspoon Black Pepper, freshly cracked
2 tablespoons Fresh Chives, finely chopped


Instructions

  1. Prepare the Cauliflower: Wash the cauliflower thoroughly, remove green leaves, cut away the core, and break into small florets
  2. Steam the Florets: In a pot with a steamer basket and an inch of water, bring to a boil, add the cauliflower, cover, and steam for 10-12 minutes until very tender
  3. Drain and Dry: Remove the cauliflower and let it sit in a colander; pat dry with a kitchen towel
  4. Blend the Base: Transfer steamed cauliflower to a food processor or blender, add butter, garlic, and sour cream
  5. Process Until Smooth: Blend on high until desired consistency is achieved
  6. Season to Perfection: Add sea salt and black pepper; taste and adjust seasoning
  7. Garnish and Serve: Transfer the mash to a serving bowl, top with chives, and serve immediately

Notes

To prevent a watery texture, ensure to dry the cauliflower well after steaming.
