Ingredients
1 large Fresh Cauliflower Head
3 tablespoons Extra Virgin Olive Oil
3 cloves Fresh Garlic
1 medium Shallot
1/2 cup Fresh Flat-Leaf Parsley
1/4 cup Fresh Chives
2 tablespoons Fresh Dill or Mint
Sea Salt & Black Pepper to taste
1 teaspoon Lemon Zest
Instructions
- Prepare the Cauliflower: Remove the leaves and tough core, breaking the head into medium-sized florets. Pat dry
- Create the Rice: Pulse florets in a food processor until they resemble rice. Alternatively, box grate for a rustic texture
- Sauté the Aromatics: Heat olive oil in a skillet, add shallots and sauté until translucent. Add garlic and cook until fragrant
- Sear the Cauliflower Rice: Increase heat, add cauliflower, spread evenly, and let sit undisturbed for about 2 minutes for browning
- Cook to Perfection: Stir and sauté for another 3-5 minutes until tender-crisp
- The Herb Infusion: Remove from heat, fold in herbs, lemon zest, salt, and pepper
- Final Toss: Toss everything to distribute herbs and adjust seasoning before serving
Notes
Use a large skillet to prevent steaming the cauliflower. Cook in batches if necessary.
Salt the cauliflower at the end to maintain texture and moisture.
