Keto Lemon Garlic Shrimp Zucchini Noodles is a quick, high-protein, low-carb meal featuring shrimp and zucchini noodles in a vibrant lemon-garlic sauce, ideal for a busy weeknight.
Ingredients
1 lb Large Shrimp
3 medium Zucchini
2 tbsp Extra Virgin Olive Oil
4 cloves Fresh Garlic
2 tbsp Lemon Juice
1/2 tsp Red Pepper Flakes
1/4 cup Fresh Parsley
Sea Salt & Black Pepper to taste
Instructions
- Pat the shrimp dry and season with salt and pepper
- Heat olive oil in a skillet over medium-high heat and sear the shrimp for 2 minutes per side until pink and opaque. Remove and set aside
- In the same skillet, reduce to medium heat and sauté minced garlic and red pepper flakes for 30-60 seconds
- Add zucchini noodles to the skillet and toss for 2-3 minutes until al dente
- Return shrimp to the pan, pour in lemon juice, add parsley, and toss for 1 minute
- Serve immediately, garnished with lemon wedge or zest
Notes
Ensure not to overcook the zucchini noodles to prevent them from becoming watery.
